Hatch Family Chocolate

The project dealt with a remodeling of an old commercial structure in the Avenues above the city of Salt Lake City. The original structure was a meat cutting and packing store; the structure had no apertures except for the front door. Steve and Katie Hatch of Hatch Chocolates, having a success with their chocolate shop and their TV show on HBO,” The Little Chocolatiers”, bought the building and asked Pollard Architects to create a chocolate factory, chocolate shop, two tenant spaces and a house for them connected to the factory. A process of rezoning and change of use was called for and Pollard Architects successfully orchestrated the change through the City of Salt Lake City. We Master Planned and designed the facility. The lower level is the chocolate factory; the main level chocolate shop is on the west end of the structure. A restaurant and brewery went into the two tenant spaces to the east. Both are successful commercial inclusions to the historical neighborhood of the Avenues.
